Preparation of YELLOW RICE:
Ingredients:
- Long-grained Rice - 2 cups
- Bay leaves - 2
- Pepper powder - 1tsp
- Dry red chilies - 3
- Cardamoms - 3
- Cloves - 2
- Cinnamon - 1" piece
- Turmeric powder - 1 tsp
- Ghee - 3 tbsp
- Onion (sliced) - 1
- Coconut milk - 3 cups
- Salt to taste
Method:
- Wash the rice. Drain out the water and leave aside for half an hour.
- Heat the ghee in a pan; add the sliced onion till it is crispy.
- Add the whole spices and allow spluttering. Lower the heat and mix in the rice.
- Add turmeric powder and salt to taste and cook over a medium heat, stirring all the time for 3-4 minutes.
- Add pepper powder to it.
- Lower the heat and add coconut milk to cook the rice. Cover with a lid and cook till the rice is tender but not overcooked.
- Ready to serve hot.
