YELLOW RICE




Preparation of YELLOW RICE: 


 Ingredients: 

  •  Long-grained Rice - 2 cups
  •  Bay leaves -
  •  Pepper powder - 1tsp
  •  Dry red chilies - 3
  •  Cardamoms - 3
  •  Cloves - 2
  •  Cinnamon - 1" piece
  •  Turmeric powder - 1 tsp
  •  Ghee - 3 tbsp
  •  Onion (sliced) - 1
  •  Coconut milk - 3 cups
  •  Salt to taste

Method:

  • Wash the rice. Drain out the water and leave aside for half an hour.
  • Heat the ghee in a pan; add the sliced onion till it is crispy.
  • Add the whole spices and allow spluttering. Lower the heat and mix in the rice.
  • Add turmeric powder and salt to taste and cook over a medium heat, stirring all the time for 3-4 minutes.
  • Add pepper powder to it.
  • Lower the heat and add coconut milk to cook the rice. Cover with a lid and cook till the rice is tender but not overcooked.
  • Ready to serve hot.
