Preparation of VEGETABLE PULAO:
Ingredients:
- Basmati Rice - ¼ kg
- Carrots, chopped - 25 gms
- French beans, chopped - 25 gms
- Cauliflower, chopped - 25 gms
- Peas - 25 gms
- Shahi Jeera - 1/2 tsp
- White pepper - 8
- Cloves - 8
- Green Cardamoms - 8
- Black Cardamoms - 2
- Cinnamon - 1"long 2 sticks
- Onions, sliced - 2
- Ginger, crushed - ¼"piece
- Garlic, crushed - 3 flakes
- Chili powder - ¼ tbsp
- Haldi powder - a pinch
- Coriander, chopped - 1 tbsp
- Green chili - 5
- Bay leaf - 3
- Garam masala powder - 1 tsp
- Water - 2½ cup
- Ghee - 3 tbsp
- Salt to taste
Method:
- Heat ghee in a cooker,put sliced onions and sauté for sometime.
- Let it be golden brown and crispy,then take it out on a clean paper to soak out extra oil. keep aside.
- Put the bayleaf,shahi jeera,cloves, cardamoms, cinnamon, white pepper and roast.
- Put the ginger garlic and sauté till it smells nicely.
- Put the rice and mix for sometime, then put vegetables, chili powder, haldi powder, coriander leaves, green chilies, garam masala powder,salt and water.
- Close the cooker lid and pressure cook for 3 minutes till it is about to whistle. then slow it down for 15 mins.Take out from heat.
- Open it after pressure is released. So, let it stand for few mins. Then garnish with fried onions.
- Ready to serve hot.
