Preparation of BALUSHAHI:
Ingredients:
- Refined flour (maida) - 1 1/2 cups
- Soda bicarbonate - 1/4 teaspoon
- Oil - 2/3 cup + to deep fry
- Yogurt, beaten - 8 tablespoons
- Sugar - 2 cups
- Milk - 2 tablespoons
- Pistachios, finely chopped - 4-5
Method:
- Place the refined flour in a bowl. Add soda bicarbonate and mix.
- Add two third cup oil and mix.
- Add yogurt and mix.
- Add a little milk and knead into a soft dough.
- Rest the dough for 45 minutes.
- Heat together sugar and one cup of water till it reaches a two-string consistency.
- Midway through add milk and when the scum rises to the surface remove and discard.
- Divide the dough into equal lemon sized portions and shape into smooth balls.
- Make a slight dent in the centre with your thumb and rest the balls for a few minutes.
- Heat sufficient oil in a kadai.
- When the oil is medium hot, gently slide in the balls and deep fry on low heat till golden.
- Drain and place them on a plate.
- Drizzle the syrup on the balushahis.
- Garnish with pistachios and serve when cooled.
