BALUSHAHI



Preparation of BALUSHAHI:


Ingredients:

  • Refined flour (maida) - 1 1/2 cups
  • Soda bicarbonate - 1/4 teaspoon
  • Oil - 2/3 cup + to deep fry
  • Yogurt, beaten - 8 tablespoons
  • Sugar - 2 cups
  • Milk - 2 tablespoons
  • Pistachios, finely chopped - 4-5

Method:

  • Place the refined flour in a bowl. Add soda bicarbonate and mix.
  • Add two third cup oil and mix. 
  • Add yogurt and mix.
  • Add a little milk and knead into a soft dough.
  • Rest the dough for 45 minutes.
  • Heat together sugar and one cup of water till it reaches a two-string consistency. 
  • Midway through add milk and when the scum rises to the surface remove and discard. 
  • Divide the dough into equal lemon sized portions and shape into smooth balls. 
  • Make a slight dent in the centre with your thumb and rest the balls for a few minutes. 
  • Heat sufficient oil in a kadai. 
  • When the oil is medium hot, gently slide in the balls and deep fry on low heat till golden. 
  • Drain and place them on a plate.
  • Drizzle the syrup on the balushahis. 
  • Garnish with pistachios and serve when cooled.
