MUSHROOM BIRYANI



Preparation of MUSHROOM BIRYANI :

    Mushroommm!!!!!! really it is craze for me n my hubby. We love eating anything prepared with mushroom.From my childhood, I do have a curiosity for mushroom when my mom used to prepare different varieties of mushroom dishes.It is a pricey vegetable that's equivalent to chicken. I love to eat posto-mushroom,i.e mushroom prepared in posto masala.It is one of  the Oriya-Bengali dish.

     From my mom's kitchen it is really fantastical!!! I could not wait for lunch to be served. Nothing tastes good than having your favorite dishes cooked by your mother and then eating it with your entire family. Now I used to try different dishes using mushroom for my hubby's taste.Sometime it clicks and sometime not.But still the plate is to be cleaned up with finger licking. 

     Thats mushroom. So, here is something with rice.Just try it.You will like it.


Ingredients:
  •   Mushroom  - 1 kg
  •   Onions (thinly sliced) - 2
  •   Basmati Rice - 4 cup
  •   Lemon - 1
  •   Oil/ghee - 3/4 cups
  •   Soy Sauce - 2 tsp
  •   Garlic - 7 Cloves
  •   Green chillies(chopped) - 4
  •   Ginger (chopped) - 3 tsp
  •   Cinnamon - 6
  •   Cardamoms - 8
  •    Pepper - 10
  •   Cloves - 7
  •   Tomatoes (chopped) - 3
  •   Chilly Powder - 1-1/2 tsp
  •    Coriander Powder - 3 tsp
  •    Mint leaves - few
  •    Salt  - to taste  
Method:
  •   Clean, wash the rice, drain the water from rice.
  •   Trim mushrooms into big pieces and keep it aside.
  •   Grind half of the cardamom, cloves, cinnamon. 
  •   Make a paste of garlic and ginger.
  •   In a pressure Cooker, heat the oil and ghee,fry cardamom,cinnamon,clove and 
      pepper.Then fry ground masala and the onion till it turns golden  brown.
  •   Then add all rest ingredients, mushrooms and stir for 10 minutes. 
  •   Add washed and drained rice.Fry it.
  •   Add 8 cups water and let it boil and stir till the rice level and the water level equals,
      pressure cook in low flame for 15 minutes.
  •   Open it after all gas has been released from pressure cooker by itself.
  •   Serve it with your favourite raita. 
 Tip: 
  •  After trimming mushroom just wash  and stir fry them.It make them more tasty.
  •  You can garnish mushroom biryani with fried onions.


    Do you know:  
    • Scientific name of mushroom : Agaricus bisporus
    • Cooked mushrooms are an excellent source of niacin and good source of riboflavin.
    • Mushroom should be stored unwashed in loosely closed paper sack or in their original packaging on a refrigerator shelf no more than 2 to 3 days.
    • Archaeological evidence indicates that humans have been eating  mushrooms for thousands of years.
