KHAMAN DHOKLA


 

Preparation of KHAMAN DHOKLA :

        
          Gujarati cuisine is one of the famous cuisine of India.It is strictly Vegetarian.Still it adds  spice to life. My father do have a Gujarati friend, well a family friend very close to us.As I know "Khatri uncle" from my childhood. Amrit aunty  means his wife prepares lot of lovely dishes - "Flavor of Gujarat"that she used to share with our family.But after my marriage it became a dream for me to have a Gujarati dish and even prepared by a Gujarati  person. I was lucky to have a Gujarati girl "Minal bahen Patel"as my student after my marriage. She took the privilege to provide me this recipe from her mom's kitchen. Really Minal wherever u r  I m missing u and  ur mom's different varieties of Dhokla ,etc.Thanks for everything.....

        So, here I present Khaman Dhokla one of the nutritious snacks .It is nourishing and balanced.

Ingredients:
  •  Bengal gram flour (besan)  - 1 cup
  •  Semolina (rawa) - 1 1/2 tablespoons
  •  Citric acid crystals - 1/2 teaspoon
  •  Sugar  - 3 teaspoons
  •  Green chilli-ginger paste - 1 teaspoon
  •  Eno's fruit salt - 1 1/2 teaspoons
  •  Salt to taste  
For the tempering
  •  Mustard seeds - 1/2 teaspoon
  •  Sesame seeds - 1/2 teaspoon
  •  Green chillies, chopped - 2
  •  Asafoetida (hing) - a pinch
  •  Oil - 1 tablespoon
    For the garnish
  •  Chopped coriander - 1 tablespoon
  •  Chilli powder - 1 teaspoon
Method:
  • Combine all the ingredients except the fruit salt in a bowl and make a batter using 1 cup of water.
  • Add the fruit salt. Sprinkle a little water over the fruit salt and mix well.
  • Pour half the batter into a greased 150 mm. (6") diameter  plate and Steam over water either in a cooker or steamer. Pierce knife, and check, should come out clean if done.
  • Repeat with remaining batter to make 1 more tray of dhoklas. Keep aside.
  • To prepare the tempering, heat the oil in a small pan and add the mustard seeds. When they crackle, add the sesame seeds, green chilli and asafoetida and remove from the fire. Add 1 tablespoon of water and pour the mixture over the steamed dhoklas.
  • Garnish with the coriander and sprinkle with the chilli powder.
  • Cut into Square pieces and serve with Green chutney or Coconut Chutney.
 Tip: 
  • You can use 1 tsp of lemon juice instead of  Citric acid crystals.
